I use Adafruit SSD1306 with ESP8266

Yes it can. There is an I2C command that adjusts the brightness. If you would like to use a potentiometer or resistor to change the value, you can program your micro controller (arduino, pic, etc) to read an ADC value and send the I2C accordingly.

I need a panel for displaying an animation of 30 frames of gray scale bitmap pictures. Will this 128 X 128 be able to do that with a Teensy 3.2 or 3.

Does it come as i2c or spi? i want to use i2c but can't get it to work and can't tell if i need to solder the resistor or not
