Yes you can leave the sand at the beach.

Q: If I had to manually set the crossover frequency on my receiver, which would be ideal?

While this is a matter of preference, Klipsch would recommend setting the R-610F speakers in between 80-100Hz.

Q: How does this sound with the RP-500C?

Depending on your distance it could vary for a wide soundstage. However, in my setup, which is about 9 feet away from the center, it sounds fantastic. The 500c is excellent compared to the regular reference r-52c. Much more clarity and the dispersion pairs well with the dispersion of the 610f horn/wave guide. More than 10 feet would probably warrant a bigger center though for soundstage width.

Q: How high off the ground does the lowest point of the speaker measure? Thinking of using for rear speakers but don't know if they're high enough

Here are the speaker dimensions Height - 37” (940 mm), Width - 9.4” (240 mm), Depth - 15.1” (384 mm). They should work well in rear speaker position.
